Ingredients
-
1/2 lb. Penne pasta
-
1/2 C Green peas, Fresh or frozen
-
1 Tbsp. Dill, chopped
-
1 Tsp. Garlic, minced
-
1 Tsp. Indian Red Chili Flakes
-
1/2 C Sour cream
-
1 C cream or non-dairy alternative
-
2 Tbsp. Olivia's UP EVOO
-
Salt and pepper to taste
-
Handful of shaved or sliced Parmesan Romano cheese and extra dill to garnish
Directions
Boil Penne Pasta in a medium pot with a pinch of salt, add peas close to the end. When penne reaches al dente (still slightly chewy, not over cooked) take off heat and drain, set aside.
In a large pan, heat on medium to low, warm up Olivia's UP EVOO and Olivia's Wild Fernleaf Dill Olive Oil. Add sour cream and cream. Stir or whisk together until sauce ingredients are combined.
Add chopped dill, minced garlic, red pepper flakes and fresh ground salt and pepper, to taste. Stir or whisk together. Simmer on low for a couple of minutes.
Add Penne and Peas from the colander back into the sauce, stirring everything together to combine.
Drizzled with Olivia's UP EVOO and a sprinkle of salt and pepper. Garnish Penne Alfredo with a generous handful of Parmesan Romano cheese on top. Enjoy!
Recipe Note
For a variation, try some of our Pappardelle's Pasta, many flavors to choose from, like Garlic Chive Shells
Serve with side dishes like the ones pictured here, sautéed seasoned sausage (or veggie sausage in this case) and steamed green beans
